We attended a cooking school there about 10 years ago and we still order the Big Kevin's Bayou blend. It is the perfect blend of spices that when liquifies turns into a wonderful spicy sauce. Not salty like most blends, these spices allow you to pour it on without the overbearing taste of this blend. PERFECT for fish. We blackened all our fish with this blend and our family and friends think it's the best!

As a California experimental cook, I really recommend "the Blend" for not just Cajun, but any time you want some zip in any dish. It's my dry rub for oven-baked chicken thighs. A great keepsake of my Cooking School class.
