New Orleans Jambalaya is a classic and flavorful Creole dish that originates from the city of New Orleans, Louisiana. It's a one-pot rice-based dish that combines a mix of meats, vegetables, and spices, resulting in a hearty and delicious meal. Jambalaya is known for its rich blend of flavors influenced by French, Spanish, and African cuisines.

New Orleans Jambalaya is a dish full of warmth and soul, bringing together a symphony of flavors that will transport your taste buds straight to the heart of Louisiana. Enjoy this delightful and hearty dish with your friends and family!

Ingredients

  • ¼ C. oil 
  • 1 ½ lb. smoked sausage
  • 4 C. onions, diced
  • 2 C. celery, diced
  • 2 C. green bell pepper, diced 
  • 1 Tbsp. garlic, minced
  • 1 ½ lb. cooked chicken
  • 5 C. stock
  • 3 heaping Tbsp. Joe’s Stuff seasoning
  • 4 C. long grain rice
  • 2 C. green onions, sliced

Procedures

  1. In a large pot over medium heat, add oil and brown sausage. Avoid stirring, to allow sausage to stick and brown. Remove the sausage, leaving the drippings in the pan.
  2. Sauté onions, celery, green bell pepper, and garlic in the drippings to the tenderness desired.
  3. Return sausage to the pot then add the chicken. Add liquid and Joe’s Stuff then bring to a boil. 
  4. Add rice, stir together and return to rapid boil. Stir again and remove the pot from the heat and cover. Let this rest for 25 minutes. Remove the cover and quickly turn rice from top to bottom completely. Add green onions and serve.

Makes 12 Servings

Notes

  • For added flavor, Season and brown chicken in oil over medium to high heat. Then add sausage to the pot and sauté with the chicken. Remove the chicken and sausage from the pot, leaving the drippings. Then follow steps starting with 2.
  • If using Kitchen Bouquet for brown Jambalaya add 1 to 2 Tbsp.
  • 1 C. long grain rice will feed 3 people. Over season to compensate for the rice. 
  • Cook for a total of 25 minutes, turning completely after 10 minutes.

If you’re reducing recipe for one cup of rice, do you have to reduce all of the other items when making the liquid?
