Peychaud's (pay-SHOHDS) bitters originated from a family recipe brought to New Orleans by Apothecary (pharmacist), Antoine Amedee Peychaud when he fled Haiti in 1795. He would often mix up a special brandy toddy using his private brand of bitters. This mixture later evolved into the Sazerac, a cocktail which many claim was the original cocktail. In July of 2008, the Sazerac legally became the official cocktail of New Orleans through Louisiana Legislator.
